Hi Ho, Hi Ho It's off to Disney World I go!

Yes folks, I am off again. This time to an event at Disney World called The Disney Social Media Moms. Yeah, yeah, I am not a mom but like I said before mom-bloggers accept me and this is also a event for bloggers and people in social media so that rocks the house.

I cannot wait. The conference will be fantastic because we get to hear some great speakers and learn new things but the best part is I will be at Disney World.

The price was too good to pass up. For $350 I get to go to the conference, get a hotel room at the Polynesian, some meals and a Park Hopper pass. OMG I am so excited!! The $350 also included family members but poor Tom couldn't come and that sucks big balls but at least I will be there.

If you know me, you know I am a total Disneyphile and adore all things Disney. I have loved Disney since I was a child. When we were little growing up in Los Angeles, we went to Disneyland several times a year. We went every time we had visitors from Costa Rica. It was just the place to take them because who doesn't want to go to Disney, right?

As I got older I would still go. I remember me and my friend, Sonia would often be bored on a weekend and we would drive to Disneyland at night around 5 or 6pm when we could get in half price and yet still do 5 or 6 hours just hanging out and riding all the awesome rides. It was such a fun place to go.

When I was in Florida, we would drive up to Orlando a few times a year and hang out at Disney World. I LOVE Disney World. We also went to Universal Studios and that was a ball as well. But Disney World is the best place ever. I can't wait to be there. I arrive (if the weather holds) on the 10th and then it's non-stop until the 13th when I fly back. I will be also be vlogging so keep an eye out. I will certainly vlog about my room to make you all jealous. I am also going to try and vlog at some of the places we go to and characters I meet.

I can't wait to go to the Magic Kingdom and Hollywood Studios and just be there walking around and getting on the rides. I can't wait to shop for some cool new Alice in Wonderland souvenirs that I really don't need but want. I can't wait to hang out with some of the great ladies I met at the TypeAMom conference and online. I can't wait to be at Epcot and walk around and see all the different countries. So I will be MIA but if I can get some vlogs up, then you will be able to follow all my adventures. Yippee!!

I need to send a huge thanks out to my sister and Tom who are kindly sponsoring my trip to Disney. I so appreciate them!! They are the best Husband and sister EVER!!!

HAPPY BIRTHDAY TO ME!

Today is my birthday and I am old. 46 - Holy Cow. I really haven't received your gifts yet but with this weather I am thinking they are lost in the mail? You can still send them, okay. I don't mind late gifts.

Anyhow, as I am awaiting gifts, flowers, cash, etc. here are some pictures for you of ME! I actually found the first picture ever taken of me!!! So enjoy them on this special of special days!!

The Barefoot Contessa and I ~ Part Three

Okay, I am still on my quest to be like Ina Garten. She may be the Barefoot Contessa but dammit I am the Modest Goddess, so there.

Now if you read my blog religiously, as you should, you know that I have a love/hate relationship with her. I love her food, her TV show and she seems like a nice lady. But I am jealous of her TV show, her money, her kitchen, her gays, her house and her life in general.

I also know that my cooking would never ever meet her impossibly high standards. GRRR But I am always trying to please her although she has no freaking clue who the hell I am and would consider me a stalker if she did. But I digress.

So the other day I am curled up in my recent pain watching TV and I click over to the Food Network. You know of my Food Network love as well. So there she is in her giant kitchen that I covet cooking chicken for a friend of hers. She was teaching her how to make it. Why can't she come here and help me make chicken? GRRR Whatever, Ina. Anyhow, she is making some fantastic chicken and I am looking and thinking: "Hey, I can do that."

So on Sunday, I decide to make Ina's Garlic Roast Chicken. I think I can do it by memory but I decide to look for the recipe on the Food Network site, just in case. You know I can't follow a recipe to save my life but I try. So I start with my chicken that I salt inside and out. I stuff garlic and a lemon in its bum but I don't tie it up like Ina does. Okay, I am just gonna open those legs up again anyway so why tie the legs, right? Again, it's Ina being such a perfectionist. GRRR I chop up onions, carrots and potatoes and toss them in the roasting pan. I put the chicken on top, salt and pepper the veggies and then pour the butter all over them. I stick it in the oven and cross my fingers.

In 15 minutes I could smell the onions roasting. Yum! When the allotted time was over and I checked the chicken it was perfectly roasted and the veggies were soft and delish. Since I can't follow recipes, I added some yellow squash to the mix just for kicks. But overall, I did a pretty good job.

Of course, it's not as pretty as Ina's chicken but it's pretty darn close and the taste was delish. For once, I believe if Ina saw my chicken she wouldn't be horrified.

Umm, Happy Groundhog Day, I Guess

Okay WTH is up with Groundhog Day? Really, I want to know. I don't get it. Does this groundhog really know anything about the weather? If he can tell me the winning Powerball numbers, then I am all for it. Otherwise, why torture the poor groundhog.

Every year this poor groundhog gets dragged out of its home by weird guys in funny hats and black suits to be photographed by a bunch of people. Does any one else find this disturbing? Leave the poor thing alone, I say.

I would once love to see old Punxsutawney Phil go all Cujo on these guys and really make news. Go Phil!!

Snowy Lazy Day

It snowed and snowed yesterday but it was a pretty snow. The mini car hates me because it is always out in the cold and elements though. It isn't snowing today but Tom said another wave is coming in later. I have a love/hate relationship with snow. It's pretty but it's snow. Blah!

Been Sick

I haven't been around much and probably won't be for a few days. I have been dealing with some health issues that have been a bummer. At least I found out what is wrong and now I am on medication to see if it helps. The meds make me sleepy and tired. I am also off my Nutrisystem since I don't feel much like eating anyway. I have sort of lost my appetite which is good and bad.

The next few days I am taking it easy until the meds are done and hopefully I am better. BLAH!!
